A new twist to the classic favorite, this easy meatloaf is tasty and fun!

Ingredients

1 lb. Ground beef
1 Egg
1/2 cup Cheddar cheese cracker crumbs (like Goldfish)
1 pkg. Taco seasoning
3-4 slices American Cheese
Salsa

Preparation

Combine hamburger, egg, cracker crumbs, and taco seasoning and mix well. Place half of the meat mixture into loaf pan. Place 3 slices of cheese then top off with remaining meat mixture. Cover top with generous amount of salsa and bake in 375-degree oven for about 35 min. Remove from oven and top with cheese if desired then return to oven for apx. 10 more min. or until done.

Cook's Notes

I find that creating a 'well' for the cheese in the first layer of meat then sealing the sides well after placing the remaining meat on top helps to keep the cheese from escaping during the cooking process.

My whole family really liked it! I threw it together in a matter of a few minutes, using....1 1/2 lbs. of hamburger, 2 eggs & doubled the Goldfish. I will make it again...often!

This was yummy, I used doritos instead of goldfish. My 3 yr old was ok with it. It made great leftovers

Excellent, had to cook a bit longer than suggested, but used the doritoes instead of crackers, Excellent recepie, going into my repitoire!

Like this meatloaf a lot. We use Doritos instead of cheese crackers and we use two pounds of meat and two 2 eggs, but we use the same amount of the other ingredients. 1 pound of ground Beef wasn't fillinf my bread pan.

This is a go-to favorite at our house! Our girls love it and we almost always have the ingredients on hand. A little fresh cilantro is a great addition.

same reaction. My girls loved it and they are picky sometimes. I used regular tomato sauce on half for the girls and picante sauce on the other side for mom and dad. Served with broccoli and peas/carrots.

This is my first Meatloaf dinner I've made and It was great!! It took a little longer to bake but it was fantastic. I cooked with spanish rice and mexicorn.

I can't really eat beef so I substitute the ground beef for ground turkey and it made a very yummy dinner. I also prepped it the night before, wrapped it in plastic wrap and assembled it the next day when I got home from work. Within 40 minutes I had the complete meal on the table.

This was a huge hit at our house. We did put the cheese in the middle. I skipped the salsa on top and put it on the table so they could add it their self. Served with totilia chips and beans as well as Mexicorn. Loved it!

Kids enjoyed it. Which is always welcome when one of them happens to be a very picky eater. I personally didn't really care for the taste of the salsa on top. But was glad to see the kids go back for seconds. Very easy to make and quick and simple.

This recipe was great! I even added a little sour cream. On the side, Mexicorn! Great combo! My family loved it!
