In a 2 qt. bowl combine soy sauce, olive oil, vinegar, and garlic. Toss chicken pieces in bowl until coated and let marinade 20 minutes. Boil noodles and soy beans 3 minutes.Strain and set aside. In a wok or chicken fryer pan place 3 T. olive oil and brown chicken on all sides. Reserve marinade for later use. Cook chicken completely (about 15 minutes). Remove chicken from wok and set aside. In the same pan saute mushrooms, carrots, and red pepper approx. 2 minutes until Al Dente. Toss noodles, soy beans, green onion, red pepper, and chicken into wok. Pour over reserved marinade and cook 1 minute. Serves 4 people.
