Hip Huevos with Avocado Salsa

A quick, healthy vegetarian dish with tastes to please the whole gang!

Ingredients

1 Avocado
2 Small tomatoes, de-seeded
2 Green onions
1 Jalapeno (optional)
3 tbsp. Olive oil
1/2 Fresh lime
1/2 tsp. Chili powder
1/4 tsp. Oregano
 Salt and pepper to taste
4 Gordita-style tortillas
1 cup Refried black beans with lime
8 Eggs
1 cup Grated cheddar cheese
1/2 Lime, cut into 4 wedges

Preparation

FOR SALSA:

Cut avocados into small chunks. Place in a bowl with chopped, de-seeded tomatoes, chopped green onions,chopped jalapeno(optional), olive oil, 1/2 lime (juiced), spices and salt and pepper to taste. Set aside, but do not refrigerate.

FOR HUEVOS:

Wrap gordita-style tortillas in foil. Heat for 20 minutes at 300 degrees. Open can of beans and heat. Fry 2 eggs per person, to taste.

TO ASSEMBLE: br />

Place heated tortilla on ovenproof plate. Spread with 1/4 cup refried beans. Top with 2 fried eggs, and then sprinkle with 1/4 cup cheese. Repeat with other 3 tortillas. Heat in 350 degree oven until cheese melts.


TO SERVE:

Sprinkle salsa around huevos like confetti. Place lime wedge in center of tortilla.

ENJOY!

Cook's Notes

I serve this with fresh fruit such as mango, papaya, oranges and coconut for brunch.
For dinners, I marinate hominy with olive oil, soy sauce, lime juice, chives and garlic salt. Serve that with the huevos and a vegetarian tamale, and it is a feast!!!
