Yummy Asparagus & Cheese

Makes asparagus really taste good and is a great dish for company.

Ingredients

2 lbs Asparagus, washed & tough ends removed

4 oz Package of procuitto, diced small

1 Tbls minced fresh garlic

1/2-3/4 cup Grated asiago or parmesan cheese

Salt & pepper to taste

Preparation

Par boil asparagus in salted water to almost done stage,

about 10 minutes, remove from water and cut into 1-2" pieces.

While asaparagus is boiling, fry up procuitto

in small amount of olive oil on medium heat

in non-stick skillet, until crispy, about 10 minutes. Drain any excess

oil, add garlic and asparagus just to heat back

up, stir in cheese and serve.

Cook's Notes

I also add minced garlic to the water
that I boil the asparagus in. Asparagus
could be done in micro wave or stove a
day in advance for an even quicker
side dish for company.
