Healthy Meatloaf

This recipe is healthy, low fat and the kids won't know it has a lot of vegetables in it.

Ingredients

1 lb Lean Hamburger meat or lean ground turkey
2 Pattys Vegi burgers, thawed & broken up
1 Onion
1 Carrot
2 Zuchini squash or yellow squash
3 Gloves garlic
1/4 bunch Fresh Italian parsley
1 tsp Garlic powder
1 tsp Marjoram leaves
1/2 cup Whole rolled oatmeal
2-3 tsp Worcestershire sauce
1/2 cup Catsup
1 8oz Can tomato sauce for topping
Salt and pepper to taste.

Preparation

Pre-heat over to 350 degrees.

Mix meat and vegi burgers together in large bowl

Grind the vegetables, garlic, parsley and marjoram

in a food processor til very fine.

Mix in with meat and the rest of the ingredients,except

the tomatoe sauce. Mold into a regular loaf pan, or into smaller ones

for smaller servings. Top with tomatoe sauce and bake in 350

oven for 1-11/2 hours.

Cook's Notes

Don't over mix the ingredients.
You can use catsup or non-fat brown
gravy mix for the topping also.

I omitted the oatmeal but used whole wheat bread crumbs and also added an egg. I thought 1.5 hrs was too long of a cooking time. Maybe my oven is "off", but it was very done when I took it out. It was great in sandwiches the next day.

This was very good. I added an egg as well. It reallly needed to sit out of the oven for about 20 minutes in order to "firm up"...our second helpings were much better! My food processor died so I grated the veggies. This resulted in pieces that were too small...next time will dice instead. Otherwise, a very solid dish...I would suggest adding about a tablespoon of Italian seasoning blend to the mix as well!

This is wonderful! It is a little time consuming to make. The person that wrote the other comment asked if it needed an egg, and more meat....yes to both. I did, and it was good and healthy! Good to freeze also.

This never firmed up. Did it need an egg? Should the squash amount have been different? Should it have taken 2 pounds of beef?
