Aloha! Clucker Burgers

Aloha! Clucker Burgers make a tasty, healthy and simple meal that is light on fat, big on flavor, and easy on your budget. From the grocery bag to the table in less than one hour, your whole family will enjoy this great new twist on two traditional entrees -- burgers and chicken. Say Aloha! and make Clucker Burgers a new favorite in your home.

Ingredients

Aloha! Clucker Burgers

1 lb. Ground Chicken

2 tbs. Sweetened Condensed Milk (may substitute Fat-Free if desired)

1 8oz. Can Crushed Pineapple in its own juice

Dash of Salt and Ground Black Pepper

1/3 cup Feta Cheese, cubed or crumbled

4 cups Prepared Pineapple Couscous (see recipe below)

Pineapple Couscous:

1 cup Water

1/4 cup Reserved Pineapple Juice

1/2 tbs. Butter or Olive Oil

1/4 tsp. Salt

1 cup Uncooked Couscous

Preparation

Aloha! Clucker Burgers


(1) Preheat oven to 350 degrees.

(2) Drain Pineapple, reserving juice.

(3) In large mixing bowl, thoroughly combine Ground Chicken, Sweetened Condensed Milk, Salt, Pepper and 2 Tbs. of the reserved Pineapple Juice.

(4) Using one-fourth of the chicken mixture, create a patty around one-fourth of the Feta Cheese. Place chicken patty in ungreased glass baking dish.

(5) Repeat with remaining chicken mixture and Feta Cheese to prepare four patties.

(6) Top each chicken patty with one-fourth of the Crushed Pineapple (approximately 2 oz.).

(7) Bake for 30 Minutes.

(8) Serve each Clucker Burger over about 1 Cup prepared Pineapple Couscous.



Pineapple Couscous:


(1) In microwave-safe bowl, combine Water, Pineapple Juice, Butter and Salt.

(2) Microwave on High for 1-2 minutes or until water boils rapidly.

(3) Remove from microwave, add Couscous quickly, stir, cover with lid or plastic wrap.

(4) Let stand at least 5 minutes.

(5) Fluff with fork before serving.

Cook's Notes

Serving suggestion: Served over a bed of wilted spinach, Aloha! Clucker Burgers are a tasty, healthy and attractive meal.

Extra tip: Aloha! Clucker Burgers reheat nicely in the microwave, for an easy meal in minutes. Leftovers are great for lunch at the office or dinner on the run.

Pretty good! I will make this again :) Even my 3 year old will eat this! :) Couldn't find the ground chicken though, so I used ground turkey. I think the chicken would be better.
