Quick and easy chicken and vegetable casserole

Ingredients

5 Chicken breasts boned and boiled
2 packs Chopped broccoli
1 can Creamed chicken soup
3/4 cup Mayo
1/3 cup Evaported milk
1/2 cup Cheddar cheese
1 tsp. Lemon juice
1/2 tsp. Curry power
1 cup Buttered bread crumbs

Preparation

Place cooked and drained broccoli in casserole, top with chicken.

Combine soup, mayo, milk, cheddar cheese, juice and curry power. Pour over chicken. Sprinkle bread crumbs over top

Bake at 350

25-30 minutes

Can use fresh or frozen broccoli
(about 2 cups)

Reduced fat mayonnaise, nonfat evaporated milk, and 98% fat free cream of chicken soup used for nutrient analysis.

I use gluten free cream of chicken soup (homemade, it is easy and quick: make a white sauce using cornstarch, butter, chicken broth and cream or skim milk). I also use Gluten free bread crumbs (bought or made from rice bread). I use low fat mayo, but I use real butter. This recipe is a favorite!

Using a low sodium /fat soup with skim milk and skipping the mayo altogether would help. leave out the butter too! ouch!

Is that 700 calories per serving or for the entire casserole? And you'd have to see if you could get a low sodium or sodium free soup too. ;-)

I wouldn't even consider this recipe because of its extremely high sodium content. It sounds delicious, but this is a real drawback.

Over 700 calorie per serving!! Maybe some of you can but I cannot eat that many caloriesin a dish or even a meal!! Howeve I can see how one could cut back the calories by using different ingredients....less butter or use something lighter like Smat Balance, skim evap. milk and a lower fat soup for instance.

This turned ot pretty good although I didn't add enough butter to the breadcrumb topping. Still tasted great would definitely make it again.

My three year old daughter ate it all, including the broccoli. I think it is a fabulous dish. 2/2/2012 After making this recipe for a few years now, I have modified it to reduce the calories and sodium. I cut out the evaporated milk, use unsalted butter and reduced the soup, mayo and cheese by half. Still a great, tasty dish.

I have been making this for years; it's so yummy I used to request it for my birthday dinner when I was in middle school. Especially good with a baked potato!
