Ingredients
Turkey Keilbasa - 1/4 lb per person
Potatoes - 6 medium, peeled & cubed
Carrots - 4 large sliced
Cabbage - 1/2 small head cut into large pieces - 2" square
Onion - 1/2 small, diced
Chicken stock - fat free, canned, 2 cups
Olive Oil - 1/2 teaspoon
Preparation
Put olive oil into pan over medium heat. Add onions and saute until clear. Add sliced turkey keilbasa and brown slightly. Add vegetables and chicken stock. Bring to boil, turn down heat to simmer & cover. Cook until vegetables are tender.
Season with fresh ground black pepper.
Cook's Notes
There are several variations I use to make this simple meal more interesting. Caraway seeds, a pinch of cayenne, or other spices can change the dish to another flavor. Adding different vegetables such as snow pea pods or celery adds a crispy aspect.
I like to serve this with mustard that has a dash of horseradish added to spice it up.
