Lobster Roll

These were one of my favorite treats when I lived in Rhode Island.
They were sold at all the local seafood shacks.
When I moved to Pennsylvania I learned to prepare them at home.
They make a great picnic lunch or light supper.

Ingredients

Lobster meat from 2 steamed lobsters that have been cooled

1/3 cup Thinly sliced celery

2 Thinly sliced scallions

1 tablespoon Minced parsley

2 cloves Minced garlic

2 tablespoons Mayonnaise

1 tablespoon Fresh lemon juice

1 teaspoon Tabasco

4 Hot dog rolls

4 tablespoons Melted butter

Salt, pepper & paprika to taste

Preparation

Preheat oven to 350 degrees.

Crack open the lobster shells, reserving lobster meat.

Cut lobster meat into small pieces. Mix in a bowl with celery, scallions, parsley, garlic, mayonnaise, lemon juice, tabasco, salt & pepper to taste.

Refrigerate lobster salad until you are ready to eat.

Split hot dog rolls open and brush each inside with melted butter.

Stuff each roll with lobster salad.

Sprinkle paprika over top.

Place on a foil-lined baking sheet and bake 10 minutes.

Broil 1-2 minutes if desired to lightly brown the tops.

Cook's Notes

Most grocery stores will steam fresh lobsters while you shop.

These can be served right from the oven or stored in the refrigerator until serving time.

If cold, reheat 5 minutes in toaster oven at 300 degrees.
