Here is an easy and nutritional chili recipe using chicken. It's low in fat, and high in fiber.

Ingredients

1 1/2 lb Chicen breast cut in bite-size pieces

3/4 cup Onions, chopped

1/2 cup Green pepper, chopped

3/4 cup Celery, sliced

1 tbsp Olive oil

2 15 oz Cans dark red kidney beans

1 can White beans

2 15 oz Cans of sliced/chopped tomatoes

1 1/2 cups Water

1 6 oz Can tomato paste

1 tbsp Worcestershite sauce

2 tsp Chili powder

2 tsp Salt

1/2 tsp Black pepper

1/4 tsp Garlic powder

2 cups Grated parmesan and orange cheddar cheese.

Preparation

Place oil in large skillet - I use a cast iron dutch oven. Add chicken, peppers, onions and celery, salt and pepper. Cook over medium heat for 10-15 minutes, stirring and separating as it cooks. Add beans, tomatoes, water, tomato paste, worcestershire sauce, chili powder, and garlic powder. Bring to a boil. Reduce heat and simmer for 30 minutes. Ladel hot chili into individual bowls: top with grated parmesan and orange cheddar cheese.

Cook's Notes

This is great to have in the refrigerator on busy school game nights! It's great with Italian bread or crusty rolls.
