Chicken Ole with Aioli Mole

Spicy crunchy chicken with a unique fruited mayonnaise

Ingredients

1 Egg, beaten

4 tbsp Orange marmalade

1/2 tsp Chili powder

3/4 cup Finely chopped roasted almonds

4 Skinless boned chicken breast halves

3/4 cup Sour cream ( reduced fat)

1/4 cup Mayonnaise ( reduced fat)

1 Orange, peeled, sectioned and chopped

1/4 cup Finely chopped bittersweet or semi-sweet chocolate

2 tbsp Minced green onion

1 tbsp Snipped mint leaves

1 Jalapeno pepper, seeded and minced (optional)

Garnish- lettuce

Preparation

Mix together the egg, marmalade, and chili powder in a shallow dish. In another shallow dish place the nuts. Dip the chicken in the egg mixture then coat with the nut mixture. Place on a broiler rack and broil 5 inches from the heat for 5 minutes. Turn and cook 5 minutes more or till the chicken tests done. Place the chicken on a platter. Mix together the rest of the ingredients till well blended. Put into a bowl and place on the platter. Garnish the platter with lettuce.
