Asian flavors dress up this old vegetable favorite
1 pound Broccoli flowerets, cooked til crisp tender
1 Large mango, peeled, thinly sliced
1 Large green onion, sliced
1/3 cup Chopped roasted peanuts
1/3 cup Sliced water chestnuts
2 tbsp Each mint and basil leaves
Dressing
1/4 cup Plain yogurt
1 tbsp Sesame oil
1 tbsp Creamy style peanut butter
1 clove Garlic, crushed
1 tbsp Lime juice
1 tbsp Seasoned rice wine vinegar
1/4 tsp Crushed red pepper
Garnish- toasted coconut
Arrange the broccoli and mango slices in a serving dish. Top with the onion, peanuts, water chestnuts, mint and basil. Mix together the ingredients for the dressing in a bowl till well blended. Spoon over the salad. Serve garnished with the coconut.
