Live like the Italians and put day old bread to good use with this hearty salad the whole family will enjoy

Ingredients

3 tbsp Extra virgin olive oil

1 tbsp Red wine vinegar

2 cloves Garlic, minced

1 1/2 tbsp Chopped fresh basil

3 Large tomatoes, cored and diced

1/2 cup Pitted kalamata olives, coarsely chopped

4 cups Diced leftover french bread

1 bunch Arugula, washed, stemmed, dried and chopped

1/3 lb Smoked mozarella, cubed

1/3 lb Spicy Italian salami, cubed

Preparation

1. Whisk together olive oil, vinegar and garlic in small bowl.

2. Place the rest of the ingredients in large salad bowl. Toss to combine ingredients. Drizzle dressing evenly and toss again. Let salad sit for 10 minutes before serving.

3. Toss again just before serving and Enjoy!
