Ingredients

4 Small chicken breast halves
1 Egg white
1 tsp Cornstarch
1 tsp Soy sauce
1/4 tsp Salt
3 Medium zucchini
2 tbsp Cornstarch
2 tbsp Cold water
2 tbsp Vegetable oil
1 Medium onion, thinly sliced
2 Large cloves garlic, finely chopped
1 tsp Finely chopped gingerroot
3 cups Sliced mushrooms
1/2 cup Chicken broth
2 tbsp Soy sauce

Preparation

cut chicken into strips. Mix egg white, 1 tsp cornstarch, 1 tsp soy sauce and salt in medium bowl; stir in chicken. cover and refrigerate 20 minutes


cut zucchini lengthwise into halves and diagonally into 1/4 inch slices. Mix 2 tbsp cornstarch and water; reserve. Heat oil in 12 inch skillet or wok over high heat until hot. Add chicken and stir fry until done; about 3 minutes. Remove chicken, add onion, garlic and gingerroot; stir-fry until garlic is brown. Add zucchini and mushrooms; stir- fry 2 minutes. Stir in chicken, chicken broth and 2 tbsp soy sauce; heat to boiling. stir in cornstarch mixture. Boil and stir 1 minute.
