FRAGRANT BAKED SALMON WITH SAUTEED APPLE CURRY

This appetizing dish combines the moist salmon with fragrant apples.

Ingredients

1 1/2 lb. Salmon Filet

1 Egg White

1/2 t. Garlic Powder

1/2 t. Chili Powder

1 t. Low Sodium Soy Sauce

1 t. Honey

2 t. Angostura Aromatic Bitters, divided

1/8 t. Ground Cumin

1 t. Canola Oil

1/3 c. Red Onion, chopped

2 c. Granny Smith Apples, peeled, cored, chopped (about 2 med. apples)

1/4 c. Apple Jelly

2 t. Water

1 t. Curry Powder

Preparation

Heat oven to 400º F. Spray a shallow baking dish (9 or 10-inch) with non-stick vegetable spray and place salmon filet in baking dish. In a small bowl, with a fork, mix together egg white, garlic powder, chili powder, soy sauce, honey, 1 t. Angostura bitters and ground cumin. Brush mixture over salmon filet. Bake in 400º oven for 20 - 25 minutes or until fish flakes when tested with a fork, brushing again with egg white mixture halfway during cooking. Heat canola oil in a non-stick skillet and saute onion until tender. Add chopped apples and saute for several minutes. Add apple jelly, water, and remaining 1 t. Angostura bitters and stir until jelly is melted. Stir in curry powder. Place salmon filet on serving platter. Pour apple curry over baked salmon filet.

Serve this entree with stuffed acorn squash and a crisp green salad for a complete dinner party meal.

What a great recipe, thank you. Instead of apple jelly -which I didn't have --i used Mango Chutney and that worked real well. I served it with rice and peas and my husband and I we enjoyed it. Sunday we will serve this dish to 15 guests to celebrate the Epiphany, ending by the Galette Des Rois which is the tradition in Provence where I come from. Thank you again Pat for a great recipe!
