| 4 cups | Peeled cubed baking potatoe (about 1 1/2 pounds) |
| 1 | Garlic clove, halved |
| 3/4 cup | 1% low-fat milk |
| 2 tablespoons | Grated Parmesan cheese |
| 1 tablespoon | Butter or stick margarine |
| 1/2 teaspoon | Salt |
| 1/8 teaspoon | Pepper |
Place potato and garlic in a medium saucepan; add water to cover. Bring to a boil; cover, reduce heat, and simmer 25 minutes or until tender. Drain; return potato mixture to pan. Add milk and remaining ingredients; mash with a potato masher. (serving size: 1 cup).
