CRAB IMPERIAL BREAKFAST CASSEROLE

A ONE DISH COMPLETE BREAKFAST THAT CAN BE USED ALSO FOR DINNER OR LUNCH. SERVE WITH FRESH FRUIT FOR A COMPLETE MEAL.

Ingredients

1 pound Backfin or Lump crabmeat

8 ounces Softened Light Cream Cheese (or Neufchatel Cheese)

16 ounces (4 cups) shredded Monterey Jack Cheese

1/2 cup Diced Green Pepper

1/2 cup Diced Red Pepper

1 cup Chopped Onion

1 tablespoon Real Butter (not margarine or spread)

2 cups Egg Beaters

2/3 cup Milk

1 teaspoon Old Bay Seasoning (or equivalent)

1 teaspoon Salt

2 teaspoons Worcestershire Sauce

Pam or other Non-stick spray

Preparation

Preheat oven to 375 degrees. Spray to grease bottom and sides of a 9x13 glass pan.


Lightly spray frying pan with non-stick spray and melt Butter on medium heat. Add Peppers and Onions. Saute until Onions are just transparent. Remove from heat and allow to cool.


Beat together Egg Beaters and Light Cream Cheese until creamy. Add Milk, Old Bay Seasoning, Salt and Worcestershire Sauce. Mix until blended. Stir in Monterrey Jack Cheese until coated with egg mixture. Add prepared Peppers and Onion. Gently stir in Crabmeat. Pour into prepared pan and bake for approximately 45-50 minutes or until a knife inserted in middle comes out clean.
