Cheddar Ham Chowder

Family recipe

This is a sure fire family and crowd pleaser. Every time I make it everyone loves it and you will too!

Ingredients

2 cups Water

2 cups Cubed peeled potatoes

1/2 cup Sliced carrots

1/2 cup Sliced celery

1/4 cup Chopped onion

1 tsp. Salt

1/4 tsp. Pepper

1/4 cup Margarine

1/4 cup All-purpose flour

2 cups Milk

2 cups (8 oz.) shredded extra sharp cheddar cheese

1 1/2 cups Cubed fully cooked ham

Preparation

In a large saucepan, bring the water, potatoes, carrots, celery, onion, salt and pepper to a boil. Reduce heat; cover and simmer for 8-10 min. or until veggies are just tender. Remove from heat; DO NOT DRAIN. Meanwhile, in a medium saucepan, melt the margarine. Blend in flour. Add milk all at once and cook and stir until thick and bubbly. Add cheese and stir until melted. Stir cheese mixture into undrained veggies. Return large pan to heat. Add ham; heat through and serve.

Cook's Notes

This soup really does need the extra sharp cheddar to make it taste right. My mom also adds corn to her soup when she makes it.
