Ingredients
1/2 c. Golden raisins
2 tbsp. EVO oil
4 c. Chopped yellow onions
2 tbsp. Fresh dill
1/2 tsp. Ground pepper
1/4 tsp. Salt
24 Thin baguette slices toasted
24 Peeled and deveined cooked shrimp
Preparation
Place raisins in a small bowl and cover with boiling water. Let sit for 30min.
Heat oil in large skillet over medium heat. Add onions and cook, stirring often, until softened and beginning to color, 5-10min. Cover, reduce hear to medium low and continue cooking, stirring occasionally, until golden brown = 15-25min.
Drain and chop raisins and add to onions with dill,pepper,salt. Cook, uncovered for 5 minutes keep stirring. Transfer to a bowl and let cool for 30min.
Top each baguette with 1Tbsp. of onion mix and one shrimp.
