Orange Glazed Tofu with Greens

This tofu, made simply with just a few ingredients, has a subtle and sophisticated combination of tastes-great on a bed of kightly stir-fried greens.

Ingredients

Tofu
2 tablespoons Vegetable oil
2 Garlic cloves, minced or pressed
1 Cake of firm tofu (about 16 ounces), cut into 1-inch cubes
Orange Sauce
1 Large orange
2 tablespoons Soy sauce
1/2 cup Minced scallions
Greens
1 teaspoon Vegetable oil
8 to 10 cups Coarsely chopped greens ( almost any kind of green, try swiss chard, watercress, spinach, bock choy, or arugula) rinced.
1/4 teaspoon Salt
1 tablespoon Toasted sesame seeds

Preparation

1- For the tofu, warm the vegetable oil in a large skillet on medium heat. add the garlic and cook for a few seconds. Add the tofu cubes and cook, stirring occasionally, until lightly golden, about 8 minutes.

2- While the tofu is cooking, prepare the sauce. Grate the orange peel to yield 1 teaspoon of zest, then juice the orange. You need 6 tablespoons of liquid; if you don't have enough orange juice; add water or sake. In a small bowl or cup, mix together the zest, juice, soy sauce, and scallions.

3- When the tofu is golden, pour in the sauce and continue to cook on medium heat,stirring occasionally, until the sauce has been absorbed, about 5 minutes. Transfer to a bowl and set aside.

4- For the greens, warm the oil in the skillet and add the still damp greens. Sprinkle with the saltand stir-fry until just wilted. Spoon the greens onto a serving platter, top with the tofu, and sprinkle on the sesame seeds.

Cook's Notes

This is a lovely light meal simply with the addition of brown rice.
