Fish with Florentine Rice

Ingredients

1 package (6.9 oz) chicken-flavored rice mix
2 tbs Butter or margerine
2 3/4 cups Water
1 package (10oz) frozen chopped spinach
1 lb. Orange roughy or tilapia fillets

Preparation

Set rice seasoning packet aside. In a large skillet, saute rice mix in butter. Add water, spinach and contents of seasoning packet. Bring to a boil. Reduce heat;cover and simmer for 10 minutes. Top with fish filets. Cover and simmer for 5-10 minutes or until fish flakes easily with a fork.
