SPINACH STUFFED GREEN PEPPERS

This is a DELICIOUS easy to prepare meal, when you have A LOT of green peppers, as I usually do, from my garden.

Ingredients

1 dozen Large green peppers
2-3 Pkgs frozen chopped spinach
2 cups Bread crumbs(italian bread crumbs are yummy!)
2 Eggs
1 cup Shredded cheddar cheese
1 cup Shredded mozzerella cheese
1 pkg Cream cheese
Salt and pepper to taste

Preparation

Wash and slice green peppers, clean out. Boil gently in salted water (about 15 minutes) till soft but NOT mushy.

Cook spinach and drain.

Mix all the cheeses together, add the bread crumbs and eggs, mix with hands, add the spinach and salt and pepper.

Mix well with hands til well blended.

Put a fist full of the mixture in each green pepper, mounded slightly.

When on the cookie sheet, place few drops of oil on each pepper.

Bake 325 degrees for 25-30 minutes!

it was great! it could be improved by adding rice and some japaleno peppers to the stuffing.
