Marinated Salmon Seared in Pepper Crust with Cucumber Vinaigrette

Ingredients

1/4 cup Soy sauce

2 Garlic cloved mashed to a paste

1 tbs Plus 1 tsp lemon juice

2 tsp Sugar

2 (3/4 lb ) salmon fillets skinned and halved

2 tbs Plus 2 tsp coursely ground pepper

1/4 cup Olive oil

1 English cucumber peeled and seeded and chopped

1/4 cup Seasoned rice vinegar

1 tbs Asian sesame oil

Preparation

Combine soy sauce, garlic, lemon juice, and sugar. Add salmon and marinate for 30 minutes.

Remove salmon and pat dry. Press 2 tsp black pepper onto the skin side of each piece of salmon coating thoroughly. In heavy skillet heat olive oil over medium high heat. Saute salmon 3 minutes each side til it flakes. Serve with cucumber vinaigrette. Puree cucumber, vinegar and sesame oil til emulsified. Season with salt and pepper.
