Creamy pesto seafood shells

A twist on an old favorite, pasta shells filled with a yummy crab and cheese filling, topped with shrimp and creamy pesto sauce.

Ingredients

1 box Jumbo pasta shells

16 oz Ricotta cheese

1 cup Grated parmasean cheese

2 6oz Cans flaked crab meat

1 tbsp Parsley

2 Eggs

2 c Pesto sauce (homemade or store)

2 c Heavy cream

30 -40 medium shrimp

1/4 c Toasted pine nuts (optional)

Preparation

Preheat oven to 350F

Cook shells according to packaged directions and drain very well.

Meanwhile, in large bowl, mix next 5 ingredients.

In a sauce pan over low heat, mix suace and cream untill blended smooth.

Lightly spread suace over 9x13" baking pan.

Fill each shell with cheese mixture to top and place side by side in pan.

Top with shrimp, sauce, and toasted pine nuts, if using.

bake for 30-45 minutes, turning once untill heated through.

Cook's Notes

Kids can help mix the cheese and crab, and also put the shrimp on top.
