Cake Sandwiches

Elegant and delicious sandwiches that are great for parties and special occasions. Really pretty!

Ingredients

1 Loaf homemade white bread

1 Loaf homemade wheat bread

3 8-oz Pkgs. cream cheese softened

1/4 cup Milk

1 Each red yellow green bell pepper sliced

Favorite sandwhich filling

(tuna salad, ham salad, pimento cheese, cream cheese and olive, chicken salad for example)

1 Purple onion sliced

1 Head Red Lettuce

Preparation

Two loaves of homemade bread uncut. One white one wheat. Trim off crust of each loaf until it is smooth and rectangular. Slice each loaf lengthwise into three long slices. Spread one of your favorite sandwich speads in between a white and cover with a wheat. Top that wheat slice with another favorite topping. Add another white slice. Frost with Cream Cheese whipped with a little milk. Top with red, green, yellow bell pepper slices and purple onion slices. ( It looks really pretty if you place the sandwhiches on a tray lined with red lettuce leaves) Do the same with the remaining bread for another loaf making sure to alternate the wheat and white slices. Frost and serve. Then when you go to slice it, it is a beautiful rainbow of sandwich.

Cook's Notes

When you frost the sandwhich, use a large star tip and make a decorative border around the bottom of the loaf and around the top of the loaf. Place the peppers and onion in an alternating design overlapping each other on top of each loaf.
