1 cup Low-fat Bisquick Pancake mix
3/4 cup Buttermilk (fat free)
1/2 cup Wheatgerm
1 Egg
1 Banana
2 cups Blueberries
Mix all ingredients except blueberries until well blended. Gently fold in blueberries. Pour batter on a well heated and greased with cooking spray electric griddle. When pancakes begin to bubble, flip to cook other side. In about a minute or two remove from griddle and serve. Makes about 7-8 pancakes.
This gives you the convenience of a pancake mix but the added nutrition from wheatgerm, buttermilk, bananas and blueberries gives it plenty of fiber, calcium, potassium, and antioxidants. And it is a meal that the whole family enjoys.
