Yummy version of Thai yellow chicken curry. Great with basmatti or jasmine rice.

Ingredients

1 lb. Boneless, skinless diced chicken breast
1t Butter
1 Green bell pepper
1 Yellow bell pepper
3 Large potatoes cubed 1.inch.
3 Carrots, chopped
1 Onion, chopped 1/2 inch pieces
2 cans Coconut milk
1/4c Yellow powdered curry (thai or indian)
1/2t Chili powder
1t Dried crushed red pepper flakes

Preparation

Boil potatoes and carrots until tender. Cube chicken and saute in butter in large skillet with onion and chopped peppers. drain and add all into large skillet with coconut milk. Add curry powder, chili powder and crushed red pepper to taste. Heat and simmer 10 min. Serve over rice.
