Fantastic Fettuccine Carbonara

Ingredients

2 oz Turkey Bacon, finely chopped
1 tsp Olive Oil
1 pkg (16oz) Fettuccine
1 1/4 cup 2% Milk
1 cup Grated Parmesan Cheese
1/2 cup Leek Puree (see recipe in cook's notes)
1/2 tsp Salt
1 cup Cooked Peas
1/4 cup Chopped Parsley (Optional)

Preparation

1. In a large nonstick skillet, cook the bacon in the oil until crisp.

2. Bring a large pot of salted water to a boil, add the fettuccine, and cook until tender, but firm.

3. In a blender, combine the milk, cheese, puree, and salt. Mix well.

4. Drain the pasta, and add it to the skillet with the bacon. Pour the sauce onto the pasta, and toss well. Add the peas, and toss one more time. Sprinkle with the parsley (if using) and serve immediately.

Cook's Notes

Leek Puree: Simmer the sliced white portions from 1LB of Leeks in water for 5 minutes. Puree (without added water) with a pinch of salt.

This was very good, but I did not puree anything. I sauteed the leeks in the same pan as the bacon (once the bacon was out of the pan) and added the peas once the leeks were soft. I added about 3/4 - 1 cup milk and 1 tbsp flour, along with about a cup of cheese. Drained the noodles and added them to the mix and topped with the bacon. My husband had three helpings.

Everyone loved it, especially my very pregnant sister-in-law and my 19 month old niece. I added chicken to the recipe and it made a great meal with a side salad.

how is this low fat? cheese and 2 % ??
