Mother's Hot Chicken Salad

Contributed By: kathleenmyers
My dear friend's mother, who is now deceased.

This dish is great hot or cold. I use low fat or fat-free mayonnaise/salad dressing, low fat cheese or fat-free cheddar cheese, and baked potato chips, for a low fat dish.

Ingredients

2 cups Coarsely diced cooked chicken

2 cups Coarsely chopped celery

1/2 cup Chopped unsalted pecans or cashews

2 tbsp. Lemon juice

1/2 cup Seedless grapes

1 Dash worcestershire sauce

1 cup "Miracle Whip" salad dressing or mayonnaise

1/2 cup Grated or shredded cheddar cheese

1 cup Crushed potato chips

Preparation

Mix first 6 ingredients. Place in a casserole pan about 8 inches round or square, which has been greased with butter. Mix grated cheese and crushed potato chips and sprinkle on top. Bake at 450 degrees for 10 minutes. Bake longer if it has been prepared in advance and has been refrigerated. Serve hot.

Personally I loved this dish, but I have one child who doesn't like grapes, so she picked the grapes out and one child & a husband who won't eat nuts if they are IN a dish. My third child just didn't like it. They had fun helping make it though! I enjoyed the dish, though I would add poultry seasoning or sage to bring out the flavors better. If the other 4 in my family hadn't voted me down, this would be a regular meal!
