Apple Walnut Salad with Vinaigrette

Ingredients

1/4 cup Fresh cranberries
1/4 Balsalmic vinegar
1 Tblspn chopped red onion
1 Tspn dijon mustard
1 cup Vegetable oil
Salt and pepper
Mixed greens
2 Red apples cored and thinly sliced
1/2 cup Walnuts

Preparation

For dressing:

Puree cranberries. Add vinegar, onion, sugar, and mustard. Gradually add oil. Taste test. May need to add more sugar as needed. Season with salt and pepper to taste.

Combine greens. Add apple and walnuts. Toss with dressing.

Cook's Notes

I like to included red onion and cucumbers to the salad as well. Sometimes I sub pear in place of apple.
