Ingredients
8 cups Boiling water
3/4 tsp. Salt (optional)
2 cups Quick cooking grits
1 pound Rolled sausage, cooked
2 cups Cheddar cheese
4 Eggs, beaten
1/2 cup Cheddar Cheese
Preparation
Preheat oven 350 degrees.
In a saucepan, heat water to a boil. Stir in grits and salt (if desired). Cover; simmer over low heat for 5-7 minutes or until thickened, stirring occasionally. Remove from stove. Cook and brown sausage. Drain grease on paper towel. Add sausage and 2 cups cheese to grits. Combine well. Fold in gently the eggs, one at a time. Pour into a greased 6x12 inch dish and sprinkle 1/2 cup cheese over casserole. Cover with foil and bake for 55 mins. to one hour or until cheese is slightly brown on top.
Cook's Notes
Careful not to overstir the eggs. If you do, then you might have scrambled eggs.
You can make this ahead of time and warm it up within 20 minutes at an oven temperature of 250 degrees.
You can even zest up this dish by using spicy hot sausage or mexican cheese.
