Ingredients
1 box (8 oz.) elbow macaroni (2 cups uncooked)
2 cups Grated Velveeta cheese (save some for topping)
1/4 cup Butter
1/4 cup Flour
2 cups Milk
1 tsp. Salt
1/8 tsp. Pepper
Preparation
Preheat oven to 375 degrees. Cook macaroni according to directions on box, drain and set aside. Melt butter in medium saucepan, remove from heat, blend in flour, gradually stir in milk, then salt and pepper. Bring to a boil, whisk constantly for 1 minute or until thickened, remove from heat. In large casserole dish, layer macaroni & cheese (save some cheese for the top), pour sauce over macaroni and cheese and mix well (may need to add more milk if too thick). Top with remaining grated cheese. Bake at 375 degrees for 15-20 minutes or until hot & bubbly with cheese on top slightly browned.
Cook's Notes
For 2-4 people I cut the recipe in half and place in a smaller casserole dish. It's great with ham, applesauce and green beans!
