This is a simple vegetarian chili I make for my wife and myself.

Ingredients
1 bag Veggie Meat Crumbles (Morningstar or Boca)
1 Medium onion, diced
1 can Pinto beans
1 can Diced tomatoes and green chilis (i.e. Rotel)
1 tsp Cumin
1 tbsp Mexican chili powder
1 tsp Cocoa powder
Pinch of red pepper flake
Sour cream (optional)
Shredded cheddar (optional)
Preparation
Heat beans in a large sauce pan according to package directions.
In a separate pan, sweat onions in olive oil over medium low heat until translucent and beginning to darken. Turn up heat to medium high and add veggie crumbles. Cook through.
Add “meat”, tomatoes, and spices to beans. Simmer over low (barely bubbling) for 10-15 minutes, or until reduced and thickened to your preference. (If you prefer thicker, add a tsp of cornstarch). Salt if needed (crumbles and beans may add plenty).
Top with sour cream and cheese if desired.
