Ingredients

2 Medium sweet potatoes peeled and cubed 1/4in
1/2 tsp Olive oil
2 Links uncooked chicken sausage
1 Medium yellow onion chopped
1 Red bell pepper chopped
1/4 tsp Cayenne pepper
Salt and pepper to taste
4 Fried eggs to top

Preparation

place the potatoes in a medium saucepan and boil 10 minutes until fork tender

remove sausage from casing and cook through. remove from pan and add vegetables with oil

cook 7 min and add back in the sausage and seasonings.

In another pan cook 4 eggs

divide hash onto 4 plates and top each one with an egg
