Toast Danish

This is one of our favorite quick breakfast foods. You can vary it in many ways and still have the same great results.

Ingredients

1/2 Small apple
1 Heaping tbsp fat-free cottage or cream cheese
1 Slice multi-grain bread
 Dash of cinnamon
1 tsp Low-calorie sweetener (Splenda, Nutrasweet, etc.)

Preparation

1. Pare and core apple. Dice into 1/2" cubes. Cook over low heat until soft.

2. Toast bread in toaster (very brown).

3. Spread cheese on toast.

4. Sprinkle a pinch of sweetener over cheese.

5. Place apples over cheese. Sprinkle cinnamon and sweetener to taste.


Variations: type of bread used, type of fruit used, applesauce, canned sugar-free fruit fillings, spices, top with nuts, raisins or other dried fruit, drizzle a little powdered sugar/milk/vanilla over the top

Cook's Notes

This is such an easy and nutritious snack, light breakfast or breakfast side. When the kids have slumber parties, we fix up a breakfast bar and let their guests make them to their liking.

Hey guys - this called for a "sprinkle" of artificial sweetner. I can't imagine making an issue over that? Sounds like a yummy recipe - I might sub honey or even raw sugar. Reminds me of apple pie filling - never had an apple pie yet that didn't call for some sweetner of some kind....

I agree with the previous poster. We must get away from artificial "food", be it sweeteners or dyed things or trans fats. Apples are sweet enough on their own.

Apples are naturally sweet, why would you add an artifical sweetner to this recipe? Artifiical sweetners are not a healthy altnerative to sugar, let alone good for enhancing apples.
