Ingredients
1 Head lettuce,or spinach leaves cut into bite-sized pieces
1 Tomato,diced
1 Cucumber,diced
1 Broccoli crown,bite-sized
1 Carrot,shredded or diced
3 Diced celery stalks
1 Small onion,diced
1/2 Green pepper,diced
Any salad vegetables,cut-up
1 lb. Lean ground beef
1 pkg. Taco seasoning
1 lb. Cheese,grated
2- 16 oz. Cans kidney beans
1 Large bag Doritos or tortilla chips
Salad dressing, if preferred.
1 jar Salsa
Preparation
Brown ground beef & drain well. Place in non-stick sauce pan, add taco seasoning, and kidney beans. Cook on medium heat 10 minutes,or until liquid is reduced by half, stirring occasionally to make sure beans do not stick.
Prepare and toss salad ingredients while taco mixture is cooking. Place grated cheese in serving bowl with spoon.
You can put either the salad or meat mixture first in individual serving bowls, place cheese on top of meat mixture, and add crumbled Doritos. Place salsa on top of it all.
Cook's Notes
You can make it vegetarian by substituting soy for ground beef & leaving out the cheese.
Not everyone will eat the same vegetables so for guests I just put individual vegetables in small bowls, add a spoon to each bowl, and let everyone make their own salad.
The meat mixture can be reheated as needed or put on a heat tray.
We also place the cheese and meat mixture in small bowls and use the tortilla chips as scoops. This works well for packing lunch because you can keep the salad cold and crisp, while the meat and cheese is hot or reheated in microwave.
