Ingredients
1 lb Beef top sirloin steak, cut 3/4 inch thick.
2 t Vegetable oil
Salt and pepper to taste
2 Green bell peppers, diced
1 Medium onion chopped
1 Garlic clove, pressed
1 cup Beef broth
1/4 cup Water
1 1/2 t Cornstarch
1 t Soy sauce
1 can (15.5 oz) whole tomatoes, drained and chopped
4 cups Hot cooked rice or noodles
Preparation
Cut steak in half and then crosswise into 1/8 inch strips. In large skillet, heat 1 tablespoon of oil over medium high heat. Add beef; cook and stir 2-3 mins. or until browned. Remove from skillet; season with salt and pepper and set aside. In same skillet over medium high heat, heat remaining 1 tablespoon of oil. Add bell peppers, onion and garlic; cook and stir 2-3 mins. or until tender. In medium bowl, combine broth, water, cornstarch and soy sauce. Add soy mixture and tomatoes to skillet. Cook, stirring constantly, until sauch boils and thickens. Return beef to skillet; cook until heated through. Serve over rice or noodles.

Fresh tomatoes can replace the canned ones.
