CrockPot Beans and Rice

Ingredients

1 can Black beans
1 can Pinto beans
1 cup Rice
1 can Diced tomatoes
1 can RoTel
1 tablespoon Olive oil
1.5 teaspoons Kosher salt
1.5 teaspoons Italian seasoning
1/2 tablespoon Dried onion flakes

Preparation

1. Put the olive oil into the bottom of your crockpot, and add the rice.

2. Swirl the rice around in the olive oil, until it is coated nicely.

3. Drain and rinse the beans, and add them.

4. Drain the tomatoes and RoTel, but reserve the liquid in a measuring cup. I got a little under a cup of tomato juice. Add the tomatoes.

5. Add water to the measuring cup with tomato juice. You need 2.5 cups of liquid.

6. Add seasonings stir well, and cover.

7. Cook on low for about 6 hours, or on high for 3-4. It is done when the rice is tender.

Cook's Notes

Brown rice or wild rice will take longer to cook than white rice.
