Ingredients

Whisk together:
1/2 cup Olive oil
1/2 cup White wine vinegar
1/4 cup Lime juice
Stir in:
1/2 - 1 (7.5oz) jar roasted sweet red peppers, drained and diced (I use the whole jar)
3 Green onions, minced
3 Tbls. chopped fresh parsley
3 Tbls. chopped fresh cilantro
1 tsp. Sugar
1/2 tsp. Salt
1/2 tsp. Freshly ground pepper
Set marinade aside.

Preparation

Cut (8oz) block of cheddar and (8oz) block monterey jack in half lengthwise. Cut halves into 1/4" squares and arrange onto serving platter. Can also add cream cheese too (I haven't but the recipe calls for it). Pour marinade over cheeses. Cover and chill at least 8 hours. Serve with crackers.
