Chicken Tamale Pie

This is fast, easy and always a hit.

Ingredients

Box jiffy corn muffin mix
½ cup Shredded cheese
1 can Cream of chicken soup (I use the fat free)
1 t. Chili powder
1 clove Garlic, minced (more if you really love garlic)
1 can Green chilies, chopped
½ cup Chopped onion
1 cup Kernel corn (I usually just use a whole can)
1 ½ - 2 cups cooked chicken, diced
***Sometimes I will add a can of red kidney beans too ? I like it better that way.

Preparation

Preheat oven to 350 degrees. Make muffin mix like the box says and adds the cheese, set aside.

In a saucepan add all the remaining ingredients. Heat. Spray a 2qt. Casserole pan with Pam. Spoon muffin mixture into the bottom and sides. Put mixture in the middle. Bake for 25 minutes.

I just tried this recipe tonight for the first time. I must say that i did not like the outcome. I had my reservations about using the "Jiffy" brand of cornbread mix. It has been my past experience that "Jiffy" has a sweet taste compared to other brands. With this said, i think of chicken tamales as spicy, but i used it any way. I thought i would spice it up a bit by using double the portion of chili powder and green chili's. Well much to my surprise, this had no affect and the thought left with me would be " this would be very bland had i not doubled those items". My suggestion would be to those thinking about using this recipe would be: Use a Martha White brand "mexican" cornbread mix, leave the cheese for a topping, leave out the corn, and add diced jalapeno's for a "TRUE" chicken tamale taste. However i did like the original comment about adding beans to the recipe! I did this!
