Light Chicken Enchiladas

Delicious and healthy version of enchiladas!

Ingredients

3 cups Chopped, cooked, skinless chicken breast (about 3-4 breasts)

1/2 cup Chopped onion

1/4 cup Chopped green pepper

1/4 cup Chopped red pepper

1 clove Garlic, finely chopped

1 tablespoon Olive or canola oil

1/4 cup All-purpose flour

1 teaspoon Chili powder

1 teaspoon Ground cumin

1 1/4 cups Water

1 cup Prepared salsa

8 ounces Fat-free sour cream

8 (6-8 inch) whole-wheat flour tortillas

Vegetable cooking spray

Preparation

Preheat oven to 350. In large saucepan cook onion, peppers and garlic in oil until tender. Stir in flour, chili powder and cumin. Add water and salsa; cook and stir until slightly thickened. Remove from heat; add sour cream. Combine 2 cups sauce and chicken. Spoon about 1/3 cup chicken mixture on each tortilla; roll up. Spray a 13x9-inch baking dish with cooking spray. Arrange tortillas in dish. Top with remaining sauce. Cover with foil or lid; bake 25 minutes. Garnish as desired and serve immediately.
