1 1/2 pounds White or Yukon gold potatoes, washed, quartered
1 teaspoon Salt
1/2 cup Buttermilk
1/2 teaspoon White pepper
2 tablespoons Minced fresh chives
2 tablespoons Minced fresh parsley
Preparation
In large saucepan over high heat, bring potato and half the salt and enough water to cover to boil; reduce heat to medium and cook 30 minutes or until fork tender. Drain and place in mixing bowl.
Using potato masher, mash potatoes and buttermilk. Stir in remaining salt, pepper, chives and parsley. Mix until smooth; cover and keep warm until ready to serve.
