Sweetened Oat Topping (optional): Makes 1/2 cup INGREDIENTS: * 1/4 cup rolled oats * 1 tsp olive oil * 1 tsp organic evaporated cane juice or Sucanat INSTRUCTIONS: 1. In a small bowl, mix all ingredients until combined.

Ingredients

* 1 cup Spelt flour
* 3/4 cup Oat or millet flour
* 4 tsp Baking powder
* 1 tsp Ground cinnamon
* 1/2 tsp Baking soda
* 1/8 tsp Sea salt
* 2 tbsp Raw organic honey
* 1/4 cup Olive oil
* 1 cup Low-fat plain yogurt or nonfat Greek-style yogurt
* 1 cup Apples, unpeeled and shredded with a grater
* Olive oil cooking spray

Preparation

1. Preheat oven to 400°F. In a medium bowl, whisk together dry ingredients.

2. In a small bowl, whisk together honey, oil, yogurt and apples.

3. Add wet ingredients to dry ingredients and combine. Do not over-mix.

4. Mist baking sheet with cooking spray. Drop dough by rounded tablespoon onto baking sheet, 1 inch apart. Sprinkle Sweetened Oat Topping on each biscuit, if desired. Bake for 10 to 15 minutes or until biscuits are golden.
