Applesauce Bran Cereal Muffins

Ingredients

1 1/4 cups Flour

1 tablespoon Baking Powder

1/4 teaspoon Salt

2 cups Raisin Bran Cereal

1 cup Fat-free milk

1/2 cup Applesauce

1 Egg, slightly beaten

1/3 cup Firmly packed brown sugar

2 tablespoons Butter, melted

Preparation

1. Mix flour, baking powder, and salt in large bowl; let stand 3 minutes.


2. Stir in egg, applesauce, sugar and butter. Add to flour mixture; stir just until moistened. (Batter will be lumpy.)


3. Spoon batter into muffin pan sprayed with no stick cooking spray, filling each cup 2/3 full.


4. Bake at 400 degrees F for 20 minutes or until golden brown.

Cook's Notes

Great Substitute: Substitute 2 cups POST FRUIT & FIBRE Cereal for POST Raisin Bran Cereal.

Nutrition Bonus: This favorite low-fat muffin is a good source of iron.

I love these. They are easy and healthy. Best of all everyone even my kids love them! as far as the milk and rasin bran I mix them together and mush the cereal up real good then I add that to the mix and it turns out just great for me. :)

There was no mention of what to do with the bran cereal and milk. I didn't think the dry ingredients needed to sit for 3 minutes so I assumed that was meant for the cereal and milk.

When do you add the milk and cereal? Texture was rubbery.
