Calcium Rich Chilaquiles

This tasty recipe is easy and fun to make and more importantly provides a healthy serving of calcium for all who enjoy it!

Ingredients

1 Skinless chicken breast

2 cups Tortilla chips

1/2 cup Chopped onion

2 eight Ounce cans tomato sauce

2 ounces Mexican style hot tomato sauce

1 cup Shredded mozzarella cheese

1 cup Shredded jack cheese

Optional: avocado slices

Preparation

Preheat Oven to 425 degrees

1-Microwave raw chicken breast following poultry cooking instructions for your microwave

2-Place 1 cup of chips in a glass baking dish and crush them to make a fairly flat layer of chips covering the bottom of the pan

3-In a small bowl mix both cans of tomato sauce with 2 ounces hot mexican sauce. Pour 1/2 of the mixture over crushed chips

4-Once chicken breast is thoroughly cooked, wait until it is comfortable enough to touch and shred it. Place half the shredded chicken over the mixture in the pan.

5. Add a layer of chopped onion using about half the onion

6. Add a layer of mozzarella cheese, using half the cheese. Then repeat this step using the Jack cheese.

7. Repeat the layers as done in steps 2-7 with the remaining ingredients. Top the whole thing off with cheese and bake at 425 degrees for about 20 minutes or until cheese is melted.

Optional: Once it is out of the oven you can add sliced avocado on top and serve.

Cook's Notes

This is a healthier version of the traditional chilaquiles which involve a lot of frying. Mexican families enjoy this treat at any hour of the day, it's great for breakfast, lunch or dinner. Your kids can help with the crushing and layering. They're sure to love this Mexican style lasagne type of dish!
