Sweet and Sour Fish

Great main dish for a passover feast

Ingredients: Fish
Actual Cooking Time: 15 to 30 minutes

Ingredients

3 lbs Pike, carp,or whitefish
1/2 cup Sugar
1 Onion, diced
2 tbsp Wine
1 tsp Salt
Lemon slices(optional)

Preparation

Clean fish, place in 4 qt pot, cover with boiling water and simmer until tender. Remove fish to deep latter or bowl. Retain 1 cup liquid from fish. Add remaining ingredients to liquid and simmer 10-15 min. Pour sauce over fish, chill. Serve cold, garnished with lemon slices.

sounds sweet. Where's the "sour" of sweet and sour? 2 T of wine won't balance all that sugar. Are some of the ingredients off?

I haven't tried this yet but I know my husband won't go for a cold fish dinner. It gives me a great idea though. I'll play with it and make it a hot poached fish recipe. I'll sub wine for broth and add vinegar and sub agave for sugar for my diabetic hubby.
