Ingredients
4 Corn tortillas
3 cups Shredded romaine lettuce, washed and drained
1 1/2 cups Diced cooked chicken or turkey
1 cup Grated queso fresco or monterey Jack cheese
1 cup Cooked black beans
1 Small red or yellow bell pepper, cut into bite-size pieces
3/4 cup Guacamole
Vegetable oil for cooking
Preparation
Heat 3/4 inch vegetable oil in a medium skillet over medium heat until hot but not smoking.
Add 1 tortilla at a time and fry, until crisp, about 30 seconds each side.
Shake off excess oil and drain on paper towels.
Combine lettuce, chicken or turkey, cheese, beans and bell pepper in a bowl.
Toss with guacamole or other dressing if desired.
Place tortillas on plates and top with meat mixture. Serve immediately.
Cook's Notes
I top my tostadas with salsa and sour cream. I like to toss the vegetables in a lime vinaigrette.
