Ingredients
2 tbsp Olive oil
1 Medium onion, finely chopped
3 tbsp Fresh ginger, peeled and finely grated
4-5 cloves Garlic finely chopped, divided
3 cups Water or vegetable or no-sodium chicken broth
1 cup Dried red lentils, rinsed and drained
1 tsp Turmeric
2 tsp Ghee
1 tsp Cumin seeds or ground cumin
1/2 to 1 tsp Cayenne pepper
3/4 cup Fresh cilantro, washed and coarsely chopped
3 Plum tomatoes, seeded and diced

Preparation
Saute onion in oil for five minutes. Add ginger and half garlic, continue sauteing until tender, 1-2 more minutes. Gently pour in water or broth, lentils, and turmeric, stirring well. Increase heat to high and bring to boil. Reduce heat, simmer stirring occasionally until lentils are tender, about 15 minutes.
Heat the ghee in small saute pan. Add cumin seed and cayenne pepper and saute, stirring frequently, about 2 min, or until cumin seeds stop sizzling. Ad remaining garlic and cook 2-3 minutes until very fragrant. Remove from heat.
When lentils are tender mix well until it has a thick, creamy consistency. Lightly puree if desired. Stir in ghee/spice mixture. Add tomato and salt to taste and simmer on low for 5-10 minutes. Sprinkle cilantro on top and serve.
