Blueberries are good sources of potassium, vitamin C and fiber. Blueberries also contain anthrocyanins, a compound that is thought to desrease symptoms of macular degeneration, which is a disease of the eye.

1/2 cup Vanilla soy or rice milk
1/2 cup Fresh or thawed frozen blueberries
1 tb Apple juice concentrate
Preparation
Place all ingredients in a blender and blend until smooth.
Place in a freezer for 15 minutes before drinking.
