Ingredients

1 cup Flour
1/2 cup Whole wheat flour
1/2 cup Flaxseed (ground)
1/2 cup Quick oats
2 tsps Baking powder
1/2 tsp Baking soda
1/2 cup Egg substitute
1 cup Buttermilk
4 tbsps Honey
2/3 cup Raisins

Preparation

Mix all dry ingredients together in a bowl.


Combine liquid ingredients together in a separate bowl; keep raisins in reserve.


Stir liquid ingredients into dry ingredients all at once; add raisins and stir until thoroughly moistened. Batter should appear lumpy.


Fill muffin tins lined with paper or foil cups about 2/3 full. Bafe at 400 degrees F for 20-25 minutes.


Cook's Notes

Flaxseed may be ground with coffee grinder or may be purchased already ground.
